You can set it by hand
If the address puts the pin in the wrong spot, you can type the coordinates in yourself; coordinates entered by hand always take priority.

Does it appear every time someone walks past the shop?
Not necessarily. Google decides when it appears, and the customer can turn it off on their phone.
Do we track the customer's location?
No. Your shop's location goes on the card; the customer's own phone keeps track of where they are, and that never reaches us.
Does it work on an iPhone?
Not yet: the location reminder is part of the card saved to Google Wallet, which is available on Android.
What do I need to set up?
Only that your shop's address is listed under locations. The rest happens on its own.
